Charcoal or Gas?Whether you're in the charcoal or gas barbecue camp, you're in luck. Taste tests indicate there's no significant flavour difference either way. The choice is strictly personal. Consider how you plan to use your barbecue? Will you barbecue every night or just on special occasions? Will that change over time? Is cost an issue? While gas barbecues are initially more expensive, they generally cost less to operate in the long run. Both are great choices. Pick the one that's right for you!
CHARCOAL - DIRECT Direct cooking is when food is cooked directly over charcoal briquettes. Always barbecue with the lid on, turning the food once during cooking time. Covered cooking prevents flare-ups and provides evenly distributed heat for sealing in the natural flavours of all kinds of foods. Use direct cooking for sausages, chops, kebabs, vegetables, fish, steaks and other foods that take less than twenty-five minutes to cook.
CHARCOAL - INDIRECT Indirect cooking is similar to roasting - the charcoal briquettes are arranged on both sides of the barbecue kettle. With the lid on, heat rises and reflects evenly all around the food, (it's the same process as a convection oven). The barbecue does the work and you enjoy the food. Use the indirect method for cooking whole meats such as hams, roasts, ribs, chickens. turkeys, whole fish - and even cakes and breads. Basically, all food that takes more than 25 minutes to cook.
GAS - DIRECT Direct cooking is used for sealing in the natural juices of meat for moist, tender results. It's accomplished by placing the food directly over the heat source. As hot fat drips from the food onto our specially designed Flavorizer' bars, it 'sizzles' and creates the smoke that gives food that irresistible barbecued flavour.
GAS - INDIRECT Indirect cooking is used to thoroughly cook seared food and for cooking roasts, poultry, game and foods high in fat, such as ribs or duck. The burners are lit on either side of the food. The circulating heat works much like a convection oven, cooking the food evenly on all sides. |
